Strawberry and Goat Cheese Salad

This was one of those “use what you have” recipes.  I almost always have a large container of organic mixed greens in my fridge so salads are something I make frequently.  I had some strawberries that were approaching the end of their life, some goat cheese left over from the weekend, and grapes which at the time seemed very random but it worked really well!  This salad is a great summer salad, its refreshing and the flavors of the fruit with the goat cheese work.  Enjoy!!!


Ingredients: (I approximated the measurements, feel free to adjust as you wish!)

  • 3 Cups Mixed Greens(or whatever greens you have at home)
  • Strawberries
  • Grapes
  • 1-2 OZ Goat cheese
  • 1 TBSP Good quality Balsamic Vinegar(This can make or break the taste of the salad, go for a thicker balsamic)
  • 1 TBSP Extra Virgin Olive Oil
  • Salt and pepper to taste(I use sea salt, and I like fresh ground pepper)

Mix all ingredients into a bowl and enjoy!!!
