Veggie and Egg Hash

I am a big fan of lots of veggies in the morning.  If your like a lot of people you might not make time, or might not be hungry for breakfast, but it is really important to start your morning off with the proper fuel.  If your car in on empty are you going to drive it for 15 hours? No?  When your body wakes up in the morning you are running on empty.  Think of your body like a car, you have to take care of your car in order for it to work properly, you wouldn’t put oil into your gas tank.  So start taking care of your body as well as you do your car, and eat breakfast!!!

I love a veggie hash because you can use whatever you have in your fridge so the flavors are always changing.  This particular one tasted amazing and all the fiber from the veggies kept me filled and fueled throughout my morning workout.


  • Coconut oil
  • 1/2 bell pepper
  • 2 campari tomatoes
  • 1 garlic clove
  • 1/4 onion
  • 1/4 cup mushrooms
  • 1/4 avocado
  • salt, and pepper
  • 2 eggs

Preparation: Add coconut oil in your skillet until heated through.  Add bell pepper, onion, mushrooms, into skillet, season with salt and pepper and saute until to desired softness.  Add garlic and push hash mixture to the side then add your two eggs to pan, season with salt and pepper, keeping them separated from the veggies.  While the eggs cook, add your tomatoes and avocado to the veggie mixture they really just need to be heated through, if the tomatoes cook too much they will turn to mush.  Once your eggs are done push the veggie has on a plate and add your eggs on top.
