Vegan Challenge Day 4

As promised on day 3, day 4 was much more exciting! We are very lucky to live in a city that as a few vegan restaurants.  Not only that but our building happens to be across the street from one of them.  We had been there for dinner which was amazing, so we decided to try it for breakfast.  We stared our day out with a vegan chai tea, I love chai tea, it’s spicy and slightly sweet.

For breakfast I had a Portobello, veggie pesto whole wheat crepe.  I don’t know everything was in it but it tasted really good I ate it right up.  It also came with a side of apples, pears and oranges.  I love a light and healthy breakfast that energizes you for the rest of the day! Angelo got breakfast veggie tacos with guacamole, which he really enjoyed.

I didn’t really have a set lunch.  I went to the store and picked up a ton of fruit and different kind of nuts from the Whole Foods bulk section. Breakfast was so filling that I didn’t get hungry till later in the afternoon so I made an antioxidant smoothie which I’ll be posting the recipe for soon!

Dinner was really fun.  We are lucky enough to live in a state where the solar eclipse was visible.  We packed a bag of food, grabbed our dog Reno and headed to a trail that starts in downtown Salt Lake City.   The weather was perfect, and it was nice getting a little exercise in before we sat down to eat.  Our hike was short but just enough to get our heart rates up and develop and appetite for the food we brought.

Salt Lake City is such a friendly city, even Reno found a friend!

Dinner tasted great. We munched on it throughout the evening.  The eclipse takes about two hours total, but there is a small time frame where the moon completely covers with the sun.  We were a little further north to see a total eclipse, but we still got a great show.  For dinner we had leftover veggie low mein, fruit salad, blueberry muffins, macadamia nuts, cherries and a Grapefruit Izzy!

  1. Eating vegan isn’t all that hard is it? I enjoy it. I’m not strict but ever since I found out I was pregnant my body just does not digest milk anymore! Weird. 🙂

    • It really has been fun! I had been working on staying away from cows milk for awhile, but occasionally have goats or sheep’s milk cheese. I think after this challenge I’ll do 3-4 days vegan during the week. So I’ll be a part-time vegan, whats the name for this 🙂
